You just use UIS control plug to control the dehumidifier im currently using 2 one for the dehum and one for the circulation fan. you can also just leave the fan on all the time. so you really only need one.

you might want to consider putting a couple fuses on your constant current power supply outputs, if you have a device failure it could dump the entire load onto a wire. and if the wire is thin it could be to many amps and melt ur shit.

I dont hang dry first, I go in wet and put the dehumidifier on a 3min on 2 min off cycle and check the min max humidity once a day. And once it hits the 60's in the max range thats when I start to do rh set points and walking it down.
