The cooler nights won't hurt your plants just slow down growth so anything will help but I know from experience that those greenhouse are not easy to keep warm.

I have heard that peat moss restricts roots as it dries out. I couldn't tell you for sure. I have grown in 100% peat moss and didn't seem to have any issues. I would go with something like this...

Break the dark cycle with a flashlight. It should help bring it out of flower. Seems like they are suffering more from overwatering than cold.

I have done both and I prefer to trim buds right at harvest. Last harvest I tried hanging a whole plant and the leaves start sticking to the buds and I'm sure some THC ends up on leaves.
