I'm harvesting a hermi next weekend, turned out okay, a little stunted, and yes, pickin off all the nutsacks is nearly impossible. I've sampled some pieces at different stages and all is well as far as I can tell, and my little lady is pretty big, she'll prolly put out around 1 1/2 ozs.
