I think its just a marketing ploy. 100% organic sounds better to the consumer. If a seed comes from a plant grown with chemicals, some people might not consider that seed "organic." I wouldn't get hung up on that though, a seed is a seed.

A brita filter gets out chlorine, but not flouride. Fluoride can be really harmful if it builds up in plants. Don't worry too much about filtered tap water, but you could easily get water from you grocery store like GreenEyedCam said.

Definitely looks like over watering, and nutrient burn. Dont water until the soil is bone dry, and try diluting your nutrient solution. Really looks like mostly sativa, so Herbal Healing 420 is right, it will take loner in flowering.

Theres no reason to cut perfectly good leaves. Especially during flowering, the plant needs all the energy those leaves will produce.
