Firstly, just to get that out of the way, what did you spray? But honestly, I think there is more going on there than just spider mite troubles. Your new growth looks a bit shriveled, especially in the last pic. To me that points to nutrient or unhappy root issues.

- & - Do you spike it vertically deep down into the soil from the surface, or just scratch the top? How do you avoid damaging the roots? I'm a bit worried that my soil is going to compact over time during my current outside pot grow. I think I need to do this to get better top-down drainage...

Yes. Make the roots work harder to find what they need in their early stages. Airy soil that drains well, and not too much nutrients to start with.
