Making spirits as in wine and such

Do we have a spirits forum ... the kind that is about making booze? It has been a banner year for grapes in my neck of the woods and i would like to share my findings with other s...Sunni?

Spirits are distillate. Uisce Beatha, Aqua vitae, Whisky. The "essence" of the grain. That said, grapes make fine liquors, aside from the foreshots being heavy with all the nasty hangover things..

I see... well this is my first attempt , day 12 of fermenting , reduced the sugar , looking for a version of daygo red and yes I am Italian PC

A fine brandy will be nice if the wine is not to your taste. Love me some Italian table wine. Goes well with sunday Ragu.
I mostly make beers (mash) and have made mead as well as wine. As with cannabis, quality in, quality out. Your climate makes quality so you should be good:bigjoint:

I think it's a shame people don't make wine out of prickly pear cactus fruit. Seems a lot more sustainable than grapes, IMHO.

Also, I have about 100 pounds worth of overgrown agave plants to dispose of, but unfortunately I believe they are not the species used to make tequila or mescal.
