By me putting holes in the pot above water level would that solve the problems he says about the root rot and air gap between the soil and the water, what can I do to make this work

put some air stones/agitators in that res for better results.
put the pots on top of a couple of those racks so they are not sitting in the water at all, the roots will grow down and find the water, usually only a few of them and those will do fine this way. google octopotscom

So how far above the water would you say to have the bottom of the pot? Like 1/2 inch or an inch? And if I do that do I start watering the plants from the top until the roots come through the bottom or should the just find there way there on there own, thanks mate I'll Google that now

And so am I better of putting a lid on top of my water tray and putting the holes of the pots onto the lid get like some strong mesh over the holes to sit the pot on top of

doesnt much matter, inch, three five...water only when the pot is light and dry, foliar feeding will expedite it.

btw....when its all said and done...you'll switch to a good soil and bucket with organic nutrients to feed the soil.
you'll spend so much time making this just right, one fail after another, making for a great fun experiment and not so much weed.
have fun, I know, been there done this.

It's in gold label Coco pebble 60:40, and what so if I raise it will the roots make there own way to the bottom, or do I hand water until the roots hit the water

Don;t worry if they grow into the water, those roots will be physically different to roots higher up in the soil.
