the best time to top a plant is after they have gotten their first fan leaves. You cut the new shoot that is growing on the top between the new fan leaves. This will cas your plants to have two top colas insead of one. You can also top the new shoots that have split and will cause it two grow two more shoots, though I would only do this three times as 4 top colas is enough.

Cut the top of your plant off, leaving 1/4 inch of "stem" to stick out the top above the next lowest set of branches: as you can see on my scientific text example...

I always top one plant and leave the other of a particular strain that I'm growing. I like to top around the 3rd week of veg. Recently topping super skunk, I noticed 5 or 6 colas that have great volume and am very happy. Certain strains benefit from this practice and vice versa.

Topping is an excellent way to control height. As this is usually not a problem for me, I generally do not top my plants. IMO, although topping produces more colas, I think that the plant slows down its growth rate a little in reaction to trauma? It seems that the untopped plants, in a side by side comparison do not appear to slow down and therefore produce slightly fatter buds overall.(if harvested at the same time)
This has been my observation over the years, but I've never kept records or weighed anything to make certain....just a hunch!

plants have to regenerate after topping so if you had say 9 leaves (nodes) on your sun leaves after topping this number will decline and take a while to get back. it takes more energy for a plant to grow 2 tops, this will set most plants back but can make very large yeilds on large plants

What is the difference/ what happens when one Fims Vs. when one tops?
Dont really understanf the fimming never heard of this what does it do?

FIMMING A PLANT!
Fimming is actually no different that topping, what fimming does is virtually the exact same thing only your leaving part of the new growth. This only takes of part of the new growth and actually topping the very very new growth which is very hard to see.
What this ends up doing is making it seem as if your getting 4 new tops right next to eachother when its actually only 2 at the very top (like topping) but since it was cut so closely to the next newest set of fanleaves 2 branches which would have formed there anyways seems to result in 4 new tops.
