I never remove fan leaves unless they die naturally. I like mine bushy (hehe).

I dont remove any leaf unless its damaged. I do however trim all the fan leaf off 2 or 3 days before harvest. One reason is to spread out the harvest work the other is to have less plant material holding ferts so i think it pulls out any ferts remaining in the last days.
