I don't use many recipes anymore, sorry homie. I might look at a few to get some inspiration, but I pretty much go to taste now.

Anyone have a link to a favorite chili recipe? Never made it before, not too hot, could even be vegan, @sunni . Thanks
I don't use recipes
My chili is basic as fuck but I love it

Garlic onions crushed tomatoes diced tomatoes mushrooms corn black beans kidney beans and chili seasoning

It's totally not real chili but I don't care cause I love it lol

That sounds pretty bad ass....

Instead of chili seasoning, I would substitute; Paprika, cumin, salt, coriander, oregano, pepper, red pepper flakes..... all TT.

The corn adds this amazing sweetness, black eyed peas are also great.... and if you can stay away form canned stuff - you're better off soaking dried beans overnight for the best flavour.

Often, canned beans break apart too easily.... and they can't stand up to the heat needed to meld the flavours of a good chili together!

Oops When I said chili seasoning I meant like those spices I was just too lazy to write it out lol

I've not done dry beans yet honestly because when I make chili it's a quick meal for me
And after doing lentils quinoa Millet and other long process foods that week I just want quick

I like black and kidney best
But that's just me
I use black for my burgers too
Pinto would probably be nice in chili

baked beans and chili is about it. no bean salads
i make an italian bean salad.
maybe its my cultural background we tend to eat beans.

i make lots of bean spreads, and bean dips too...
i make bean balls ("meat balls") bean burgers, Chickpea avocado mashes (kinda like a tuna or chicken salad)
photo 1. black bean burgers with hemp hearts spices , and chia "egg"
photo 2. black bean balls for spaghetti
photo 3. black bean dip clearly not winning any beauty awards but its delicious and goes really well with tortilla chips
photo 4. roasted potatoes with mushroom "gravy" lemon garlic kale, and roasted spiced chickpeas

I still have a hard time with beans, if we're being honest.

The texture is.... soft but grainy.... it's very odd. I can do lentils because of their size, but beans are so big, and have such a distinct texture.... it's really been an effort on my part to LOVE beans. I started with chili, and have been moving forward. Still find baked beans unpleasurable in regards to mouth feel, but I love the taste.... especially when done with molasses and ketchup... so ghetto, but so tasty...

If only I could get past the texture issues. lol

my nonna and nonno would have these jars in their house
called lupini beans, you just eat them out of the jar, they have a "waxy" outside you like squeeze the bean and it pops into your mouth leaving the "waxy" outside

I couldn't help myself. :)

P.S. Whenever anyone uses anything besides a wooden spoon for pasta at our restaurant, we always say "Nonna would be pissed".... LOL

No one uses metal anymore....
