Easy BBQ tofu
-One package tofu I use extra firm
-your fav bbq sauce
-s &p and garlic powder
- Press the tofu for 30-45 mins if you dont have a tofu presser a plate and a shit ton of books works well for about 10 hours LOL DONT judge a presser hasnt gone on sale yet!!!!
Cut up the tofu, heat up a medium pan with some extra virgin olive oil, salt and pepp the tofu
place it int he pan wait for the sides to get nice and golden brown , flip, wait for it to happen again and than put your bbq sauce into the pan and heat throughout
(picture has sauce on the side but you get the idea)
I usually put a bit of hotsauce mixed with my bbq sauce
I made broccoli and bean sprouts with mine your side dishes are optional
Frozen salted chocolate covered Bananas.
What you'll need:
Enjoy life Chocolate Chunks ( you can use non vegan chocolate chips)
Thick Sea Salt Chunks
I use the double boiler method to melt my chocolate , you can microwave it , if you do please only do increments of 1 minute stir, 1 min stir, 1 more min stir. you can easily burn your chocolate (yuck)
chop your bananas into inch thick pieces stick in your tooth picks
cover with melted chocolate
top with a bit of salt (optional taste better imho)

1 cup water
2 cloves fresh garlic
salt & pepper
crushed red pepper flakes
1/4 cup whole wheat flour
1 small white onion
cook your tvp , (I did 1 cup water 1 cup tvp)
in the mean time, saute minced fresh garlic and onions in a frying pan
add your spices into a mixing bowl, i didnt use exact measurements its all to taste really.
add 1/4 whole wheat flour to the bowl, add your garlic and onions and tvp , mix with a spoon.
Form into ball shapes, add a bit of oil to the frying pan and fry the tvpballs until golden brown on each sides, keep the heat at medium.
serve with pasta and sauce ^_^

not a real recipe its just diaya "cheese" sauce basil red chili flakes on a pita before it went in the oven
zuchini & Rice soup
2 tablespoons of vegetable oil
4 garlic cloves, thinly sliced
1 tablespoon mild red chili powder or to taste
1/2 teaspoon ground cumin
6 1/3 cups of Vegan stock
2 zuchini cut into bite size chunks
1/4 long grain rice
fresh oregano to garnish and lime wedges
-Heat oil into heavy saucepan over med heat.
add garlic and cook for 2 mins or until softened
add the chili powder and cumin and cook over low heat for 1 min
2. stif in stock , zucchini and rice than cook over med-high heat for 10 mins or until zuchini is tender and rice is cooked through . Season with salt and pepper
3. Ladle into bowls top with garnishes and serve
2 C flour
3/4 tsp baking powder
1/2 tsp baking soda
3/4 tsp salt
3/4 tsp ground cinnamon
1 C sugar
1/2 C canola oil
1/4 C applesauce (one of the little motts cups try to go with unsweeted as motts regular or no name brands have fructose in them GROSS!)
1 C finely grated carrots (approx 2 medium)
1 1/2 tsp vanilla extract
3/4 C dried cranberries
1 cup brown sugar
2 tbs earth balance "butter"
1 tsp flour
Heat "butter" in the microwave gradually add brown sugar and flour mix until crumbly,
Preheat oven to 350 F.
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
In a large bowl, whisk together the sugar, oil, applesauce, and vanilla until combined. Mix in the grated carrots.
Stir in the dry ingredients until combined. Fold in the cranberries.
Divide the batter evenly among the muffin cups.
Add the brown sugar crumble on top
Bake for 25-30 minutes, until the muffins are golden brown and a toothpick inserted in the center of a muffin comes out clean.
Transfer the pan to a wire rack to cool for 10 minutes. Enjoy!

I tried your recipe but somehow I ended up with cheese on a taco shell! I Must have missed some directions in there lol!

I don't know what went wrong! Lol I was doing so good then before I knew it a taco shell just came out the microwave! I'm gonna call Rachel ray and see what she has to say about all this!
Chocolate chip cookies
1 c brown sugar
¼ c maple syrup
½ c oil
¼ c applesauce
1 tsp vanilla
2 c flour
½ tsp baking soda
½ tsp salt
1½ c enjoy life vegan chocolate chips
In a large bowl, beat together sugar, syrup, and oil. It will become smooth and even in consistency after a little while; don’t skimp on this step!
Beat in vanilla and applesauce.
In a separate bowl, sift together flour, soda, salt, and nutmeg.
Add dry mixture to wet; mix well.
Fold in chocolate chips.
Form into 1″ balls (or whatever size you prefer) and bake on greased sheets at 350 degrees for 6-10 minutes.
Bake these for the full 10 minutes if you prefer crunchy cookies. Larger cookies will also need longer baking time.

LOL - Vegan cooking is hard to get non-vegans to try.
I've had some absolutely fantastic vegetarian/vegan meals, it's just harder (IMO) to get the complexity of flavours, and that.... 'satisfaction' you get from eating meat, from veggies.
I find it much easier to eat vegetarian than vegan... butter, and milk products are too good to me. I've had amazing endive canapes, with cream cheese and spices. It's hard to get that.... dairy richness, from things other than dairy.
earth balance is a great vegan butter, omivore approved by my family members,
almond milk is great
in terms of baking i use these products alot
the vegan market for new products has really expanded from the origional tokury stuff lol
i dont particularly like the term organic as it can be faulty
but yes most of my kitchen has organic labled food. not really choice of my own but because vegan companies often go hand in hand with kosher and organic companies
