is it ok to hack off the cola that appears finished and let the rest of the plant go for a bit

Me too. Wait for the right day to harvest and it'll make a huge difference.

Ya do have to find the right balance though, can't trim too much off too quickly otherwise the plant will stress and the buds left on will stop ripening for a few days. If the stress of trimming is minimal, I'd rather push back my flowering time a little later and have all mature buds then go for a shorter flowering time with some buds under-ripe and/or others over-ripe. I think of it as a balance between quality versus more harvests in less time.

is there anything I should do to this giant straw sized opening where i cut the cola off
I also do that when the trichs are not consistent (cloudy/clear/amber) on the top and bottom of the plant.

Just leave it. You don't need to do anything. No bandaid needed :)

Can you show us the bud you cut off? I wanna see!!!
