Curing for Tinctures

I'm coming up on my third harvest ever. I grow mainly CBD Nordle and process it into a whole plant tincture. I've been jar curing then processing. But then I started wondering why am I waiting - all I need to do is dry and process.

I see threads on how curing helps with potency - I just don't see how that is true. To me, the potency should come with quality genetics, correct nourishment / environment and full maturity at harvest.

Am I wrong here or should I be able to just quick dry (Dry ice?) and process. Please let me know if I'm missing something in my logic.
