A Simple Medicated Lactose Free Icecream (YUM!)

So I like to make a lot of medicated treats and I figured I would share with you one of my favorites. Without further ado lets get to it.

So a good starting place for any recipe is going to be what you need of course!

  • 1 can of coconut milk (with guar gum recommended)
  • 1/2 cup coconut oil (ghee works too but if made improperly can have lactose also vastly changes flavor so choose based on your preference and what flavor ice cream you are making)
  • 1-3 Tsp Vanilla
  • Dash of salt
  • 3-4 Egg Yolks (optional but highly recommended for texture)
  • 1/2 cup total of natural sweeteners (Depends on what flavor icecream you make but I use Honey, Maple Syrup, or Agave Syrup but you can use anything you like)
Now these are not all the ingredient because anything else IS UP TO YOU. This is why I love this recipe so much as it offers almost a blank (little coconutty) palate to build a tasty icecream on. I usually just use 1 cup of mixed berries.

Now think about how much medicated coconut oil/ghee you want and make sure to remove that amount from the 1/2 cup mentioned in the bullets trust me you don't want too much or it will ruin your consistency. This recipe makes about 5 large servings of icecream, so medicate according to that. I usually substitute 5-6 tablespoons of heavily medicated oil in (1 Tablespoon is my normal get high serving but I know a lot of people who can't handle 1/2 of that) so play it by your experience just think 5 large servings.

Now take everything that I have listed in the bullets EXCEPT THE EGG YOLKS and heat on low to med low (don't cook it you have your precious medication in there now remember) all you want is to get everything one consistency. Then poor everything into a blender and add the egg yolks and also your ice cream goodies (IE cup of fruit, basically your ice cream's flavors)

After that is all blended you have a choice to make, while a lot of people don't mind eat raw egg yolks there are those that do and there is nothing wrong with either :-)

If you do want to cook those yolks a bit it wont negatively effect your tasty treat aside from possibly cooking away a bit of potency but it doesn't stop me so no worries just heat again till it bubbles a bit then you can refrigerate.

So yeah after the blending (and maybe heating) put the almost ready ice cream into a container then into the fridge.

After that has cooled (cold to the touch) you can put it into a prepped Ice Cream maker and VIOLA you have some tasty medicated lactose free ice cream! I store mine in a freezer safe tupperware, Im sure there are A LOT more options however :p

**If you have a badass ice cream maker you may not need to cool it in the fridge first mine requires it.
