Problem is this I started seeds in to big of a pot, I understand that for a fact. Thing is this plants are growing but the stem of the plants aren't sturdy enough to hold the plant. What should I do?

I need information on how to grow. I have seeds that I have collected over the years. I got two plants started but they stems isn't big enough to support anything. Plus I was told to pinch new growth to make it wide out, but instead its getting taller but very few leaves. Guys help me please...
