I'm going to be growing 3 plants in fox farm ocean forrest soil under a 600 watt hps light. I'm going to start the seedlings under this light. My question is approximately how high above the seedlings should I hang the light? I'm guessing around 2.5-3 feet. Any suggestions? BTW this will be my first grow.....

I would use a lot less powerful light than that for seedlings. You're going to fry them. Even if that's all you have and hang the light 5 ft away, the seedlings will stretch terribly.

I always use the old trusty hand under the light technique, but really if they're just seedlings I'd dim the ballast as much as I could and probably put it a good 3 feet or so. I use a 400w straight thru and usually just keep it 3-4 feet off my seedlings mostly just for the convenience of being able to work easier in my tent with the light higher up.

You will not fry them. heat is the only issue. They will dry real quick though, watch them. I have started seeds under 1000 watt hps many times with no problem. 2.5 3 foot until 2nd set of real leaves, then lower to 9-15 inches. It is a waste of electricity,I had others in veg when I've done this.

I started my last batch of seeds under 600w MH. @ 3 feet away you should be fine and they won't stretch badly at all, nor will they fry.

I suggest using cfl for seedlings.
I just fucked up my whole grow and Im pretty sure this was a lot of the reason.

My plants sit pretty 18inches under a 400w MH.

Also, that's a lot of money on electricity. Although your 600 turns down, it doesn't go down to 40w.

The HID light will be awesome for flower. Don't get me wrong, it will work for you right now its just a bit much.

I find that keeping my HID light about 18"-24" works really well. In late flower I might lower it just a little for the main colas just to piss them off and get them to resin up a little extra.
