coffee grounds is good for nitrogen, i really dont have any idea about balance of pH....but i used the organic before...try look for espoma soil acidifer, you can check the espma out on their website...they mostly sell at the homedepot for good price.

Lemon juice is VERY acidic so it works is ph down, although I don't think it lasts that long. I've never tried it personally. However I do use Baking Soda as ph up and that works great.

Nutrients are the best way to alter PH i compost, if you want it to stay that way.

Read up on how nutrients effect on media over time.
Here is something to wet your appetite:

"Put another way, applying 100 ppm of ammoniacal nitrogen has the potential to supply the same amount of acidity as a solution with a pH of 1.8. The acidity produced by a solution with a pH of 5.0 would be equivalent to the nitrification of 0.14 ppm ammoniacal nitrogen (almost undetectable). Also, doubling the concentration of ammonium from 100 to 200 ppm N doubles the acidity.
"

In other words, no wonder simple acids doesn't do much over time.
It's all about the living soil, which changes it's PH according to nutrient-ratios and how the plants are using them.
