What size pot would you say is would keep the plant comfortable and is large enough (for all of veg and flower)?

depends on where your growing it. In a small space or a larger space?

I would use a 1-2 gallon in a space that is maybe 9-12 sq ft. Larger space and more light maybe up to 5 gal. I have esen some real monsters in bigger pots.

I use three gallon pots the whole time.

I'm gonna have about a 12-15sq ft grow room probably 3 - 3.5 foot tall (semi stealth).

3 gal. is a good size. for inside, unless you want smaller plants. If so 1 gal work good. Outdoors I use 5 gal. minimum up to a 55 gal. rubbermaid trashcan.
