Hi there craig ...

Had you done a simple Google search, you would have found many sites that would have answered your question. Here's the Advanced Nutrient site where they address Sensi Zym:

http://www.advancednutrientsonline.com/advancednutrients-product-details.php?prod=sensizym

Hope this helps ...

I'm not sure what I can add to the label, it seems pretty clear to me. It's an enzyme. It breaks things down into more simple parts.

So dead roots, mold, pretty much anything that isn't a plant gets chopped up into bite-sized bits the plants can gobble up.

At least that's how it works as best I understand it.

Default Zym
I think hugetom answered it pretty well, but yeah that's true of pretty much all the "zym" products out there. The zym stands for "enzyme".

The enzymes are biomolecules that act as catalysts for chemical reactions - speeding them up substantially. So what would take days or weeks to break down naturally can happen in hours or even faster in the presence of enzymes.

Sensizym contains over 80 some enzymes that do that and probably a bunch of other stuff according to the description. So when you see the "zym" on a label just think "makes stuff go faster". Which stuff depends on the exact enzymes involved, but I think Sensizym has the most of any of the zyms so it's probably the best.
