I use 2x 4 cob panels in my 4x4. 4x 3000k Vero 29D gen 7's ran @ 2.1 amps per panel. And 2x 320h-c2100b's. Pulls around 675 from the wall total. 80 watts per cob.
Used 5 panels in a 6.5x6.5 with amazing results as well. Around 900+ µmol for both setups..
I answered most of your questions in your other post. I take it you a already bought your 3x 52v chips and are shopping for a driver correct? If not i gave you a few options to think about.
These chips ran @ 2.1 will be pulling closer to 53v. So I don't believe that driver will work properly.
I've made a few 3 cob Vero 29D panels using BXRC-30E10K0-D-73 which is the 37.6v version and Match it with a HLG-240h-C2100B and they work great. You can also step it up to 4x 38v cobs and run it with the 320h-c2100b which is how I make my panels now. 2 panels per 4x4 and getting amazing...

That's the programmable version. I use the regular version
EUC-320S210DT and it's $112 or less depending on how many you buy.
I'm using mean well version and this version. It does run cooler than mean well and it also pulls about 20 more watts from the wall 350 vs 330. This is using Gen 6...
