Actually it can bind to a Fat, or sugars. So, It many bind to the sugars in the fruit. Not sure how fast it would degrade though, so it may still be pointless.

I would think not, I guess it depends on the size of your aero garden. I have read that even some of the auto flowering plants will reach a couple of feet tall.
