    Water helps to keep the fat temp regulated. If you're using a slow cooker water is unnecessary for extracting. But it is very useful as a filter.

    You really don't even need to do that long if the temp is that high*. I grind enough to break up the calyx's and decarb in my toaster oven at 200° until it smells like someone's been smoking weed; normally about 20-25 minutes. It's very noticeable pungent smell.
