If u feel it may be over fertilization consider leeching the soil with water containing a b-vitamin. I would use superthrive (3 drops per gal of water). Depending on the size of pot run enough water through the soil so that at least a gallon runs off. Also leech the leaves with straight water using a mister several times a day. Then leave them alone for several days and see if things improve.

if they are in 5 gallon pots then please tell me you didnt bury the pots in the ground....
that crusty white shit is probably salt precipitate. thats plant poison. if you planted them in your garden you need to prepare them a better home.
some few feet from their current locatiion, next to that white wall (great choice!) dig a big ass hole for each plant, and save the dirt. you can alss make a big ass trench for both if thats easier, but the plants will need a 2 foot diameter ring on all sides for root growth, going at least 18 inches deep.
go to your local nursery or even home depot/lowes and buy a small sack of each of the following:
bird guano (you have this already if you have chickens or know somebody who does)
a 2 - 3 cubic foot bag of composted organic material (smooth and earthy, no twigs sticks roots or wood, and NO added fertilizers)
worm castings (about 2 pounds should do)
then hit your local bait shop and buy a box of red wigglers.
when you get back home,, mix half your dug out soil with the compost, about 2 cups of bird shit, and about 2 pounds of worm castings. mix it good.
throw about 10-12 inches of that stuff in the bottom of your hole, then go fill your bathtub using barely warm water, like 75-80 degrees. the water should feel like the temperature of your skin. carefully dig up one of the plants and take it into the bathtub and gently massage it's roots free of the tainted soil. once it is free of the salty soil, take her out to the hole you have prepared. set the plant in one of the prepared holes, and bury it so the leaves and like 1/2 in of stem are above ground, and slightly pack the soil down with your fingers to hold her firmly.
repeat with each plant till they are all in their new homes. add a ferw of the worms to the top area of the soil for each plant and cover the worms with some soil so they dont sunburn while they dig in. water the plants and worms in thoroughly unless it's raining, then just leave them alone. dont do shit for three days. they may droop a little but they will come back. dont water them untill the soil in their new home is dry down to about 2 inches deep.
they will require no more fertilizers for several months. plant some blueberries or blackberries in the old spot, they dont mind a little salt or sour soil.

No I didnt bury them with the buckets id like to keep them in the buckets cuz I already caught my dog trying to eat them but he cant reach them if theyre in the pots.

So I just got home from work and the new leaves that were coming out are now droopy. They were good when I lleft but now they look sad.

droopy means they are having trouble pumping liquids up from the roots. unless they are dry as fuck that usually means the roots are dying or being chewed on by something. dig them up, wash their roots in lukewarm water to remove old soil and contaminants, then replant in fresh clean soil, and water them in. even putting them back in their buckets with shitty miracle grow soil would be better than the shit thats killing them now.
