It's only during flowering you have to make sure they get uninterrupted sleep. You can bother them at night during veg all you want. Some people run lights 24 hours a day.

How long do I keep them in veg for?

a certain height? Certain nodes high?

Most people go by height. The longer you veg, the better your yield, but plants will at least double in size and some strains grow three times as tall during flowering. So when the plant is 1/3 of your usable space tall, then it's time to veg.
