drying

Well it dries slower than just hanged and the paper absorbs moisture so it's less chance of mold.
Probably it would be just easier to hand for a few days , then into jars

Anyone else want to chime in?

I hang for 5 days then jar my buds. I don't know of any real advantage to the paper method.

it protects against mold, controls the drying speed

Paper bags work best f your drying/hanging area is to dry. Open hanging may dry them to quick, where as the paper bag will slow it down. Good temp and humidity are just as important during the final stages, as they were during growing.

I've actually heard people report a harsher taste with the bag drying method. Or maybe read that in a Jorge Cervantes book.
