So i harvested a few branches early, like 5 days early. They smell great on the plant, like fruity mentos candy or something.

But of the buds i picked off and tried drying, they have been starting to smell very leafy or planty...

Ive smoked it, and its nice. It also has only been drying for about 48 hours. If its not fully dry, will it smell planty??
Does the real smell come back once fully dry and cured? is that how it works? Im just worried my buds gonna smell like crap the whole time. When I know what it really smelt like.

The smell you are looking for generally develops during the curing process. The "planty" smell is normal. I even like the planty smell

Curing and drying properly is the key. Quick dry methods always result in nasty tasting and smelling buds.
