how do i know when the seed is mature? (seed is on the plant) i want a health seed and so far the seed is half brown and half white still?

A mature seed is a dark seed, not white generally with a tiger striping look to it. White seeds are not viable. Also there is no curing to a seed. But if you plan on keeping the seeds for any length of time I like to keep mine in a crisper in my fridge. The cold simulates winter and the seeds keep better IMO
