I usually hang until the outside feels dry but not too dry, then stick in paper bags about 2-3 inchs for a couple days, the paper bags draws the moisture out then put into an airtight container(s), glass is the best but I use rubbermaid or whatever, then after the first 12 hours or so check them they'll feel like their all moist again then I leave the lid off for a hour then close it up again and do that for the first 2 days. They'll probably won't smell like you would think right away, but keep burping the containers twice a day and they will start to get that dank smell over time, sometimes it takes 2- 4 weeks to fully cure. But you can still smoke some at this point.

I wouldn't dry them totally in paper bags because they will dry out too quickly, you want a slow dry & cure process, it makes for better looking smelling and smokable buds. But experiment with it, its all about learning!!!
