Default Thermostat or not???
I am growing in an 80cu ft closet and have a 400 watt HPS in there. I am going to be getting a a fan this weekend (probably 250 -350cfm). It will be the only exhaust fan in the room and will be tied into the ceiling. Should I run this fan all time or put it on a thermostat and set it for like 73 deg?

Unless you are using co2, and/or noise isn't an issue, I would run it 24/0. Plants love ventilation and fresh air.

Nope, no co2. so than with that size of space I would probalby only need something like 150 cfm, right? I was thinking about this one comes with a caron filter... Texas Hydroponics :: Environmental Control :: Fans & Ventilation :: Can Inline Fans

I love big airflow. I would stay with what you had and if needed buy a Speedster that can adjust the speed of the fan. But yes, you can certainly get smaller and be fine. Having bends in the tubing or adding a carbon filter will change things a lot. Anything like that in there?

Well the 150 cfm would exchange your air almost twice a minute. That's pretty damn good.
