Will I need to line my carpet with anything, or will it be fine to grow on carpet? I'm thinking the carpet will absorb moisture and cause mold or something like that, but I'm not sure. So what do you think?

That will work. If you can take the carpet up without cutting it go ahead and take it out.
If you're planning on growing here for a year or more you might as well lay down some scrap wood, or if you have the money buy some 1/4 to 1/2 in. plywood and lay down so things are more stable.
