I have heard soo many conflicting numbers when it comes to Ph.

My soil Ph right now is ~7.5

This is too Alkaline, correct? I have a water/nute mix that is Ph 5.5 is that where it should be?

For soil you want a bit acidic, 6-6.8 is ideal. You probably hear alot about Hydroponics grows too, well they like it even more acidic 5.5-5.8. Soil is in no way Hydroponics, so just stick with 6-6.8. You can water with a slightly more acid water than soil, such as 5.5 and it should be ok as long as you aren't introducing too many salts to get the PH down. You can experiment with certain soil amenities to give you a good PH reading. Sphagnum moss will decrease PH.
