Then curing them.

That dryer would probably be faster than simply hanging them, but that doesn't necessarily mean your product will be as good as a slow dry/cure. The longer the process, the smoother the smoke. Drying too quickly can result in harsh smoke.

Still, those dryers are intriguing. I'd like to build one as a project some day. I'm sure it could be done for less than half of what they sell for pre-fabbed.
