im not even close yet but can you jsut cut the buds off and save the plant for another harvest or does the whole plant have to be cut and dried?

It is called re-vegging. Or rejuvenating.
There is a "how to" in the Grow FAQ and there are several threads here on how it is done.

From what I've seen this is a very time consuming process. If you have seeds available I would start them, and not put all your eggs in one basket with the re-veg.
