Default DIY DC Power Supply
So, I found a few places that show you how to convert your power supply unit into a power supply with different voltages.

A power supply with a voltage regulator costs a bundle and this one I made for under $30.

After learning about electronics in school for a number of years, I found that I mainly used a few voltages. You dont need a regulator unless you are doing something at a very specific voltage.
