Any thoughts on how much butter to use with 2 ounces of slightly better than brick weed? Im thinking 1lb(four sticks).

Also it has a bunch of seeds in it. I know they dont really do any good but do I have to take them all out? that would take forever.

I have had success with cooking on low in a crock pot w gallon of water, pound of butter, and 1 ounce of middles but this pot is worse. I want a knock you on your ass type cookie.

I know this question is over a week old; but I think I will chime in just in case the baking hasn't occured yet. I think that you could make some pretty good butter. If you are really worried about it, and having very strong butter is more important than quantity; you could always scale it down a little, and only make half a pound of butter. That is enough to make a batch of most cookies by recipe. Don't hesitate to add more water to the mix if it is necessary to get all the bud in; the THC will only cook into the butter (its solubility in water is negligible), and you will be separating it later, anyway. So, go for it, if you haven't already.
