Getting ready to make cannabutter with a lot of leaves and some stems from a recently trimmed plant... I was wondering what should dry or freeze it before making the butter?

What you want to do is soak it in water for about 24 hours prior to boiling down. THC is not water soluble, so the chlorophyll in the leaves (the green stuff) will saturate the water leaving you with just THC to boil off of the stems and trimmings.
