This is how I used to make ribs at home for my family, I like to use pork back ribs because they are more tender in the end then pork side ribs.
(do this part the night before)
First you start off with a rack or two of pork back ribs if you turn the ribs over so the bottom is facing up there will be a film on the bottom, if it has not already been scored down the center do so with a sharp knife. Next use the knife to lift up a corner of the film and the use a peice of paper towel to grib it and pull it off. after you have the film removed select any pork,chicken or rib rub from your local market or make one from a recipie book.
~If your rib rub contains an excessive amount of spicy ingredients do this step 3 or 4 hours prior to cooking because spices can actually slightly cook your meat just enough and bacteria can grown over night (in the right contions)
Now after you have sufficently covered your ribs in the rub proceed to rub them (obviously) and then wrap them in two layers of tin foil (make sure theres no way for steam to escape this is how they become tender, but if your cooking and a small hole opens dont worry too much aslong as its not gapping)
~The following Day~
let the ribs sit over night in your fridge. This allows all the flavour to soak into the meat.
(Do NOT remove the ribs from the tinfoil at this point)
You may now light a joint at this point but refrain from eating the ribs untill they are done
the next day when ever your deciding to eat take them out of the fridge and light the BBQ and keep it on as low as possibe and place the ribs on the top rack facing down, after 30min turn them over
After 1 HOUR has passed remove the ribs from the tinfoil and place them face down on the grill, after they have grill marks on them you may proceed to coat in your choice of bbq sauce, contintue cooking untill they are cooked all the way through, the final cooking time varies depending on your bbq.
If you wish to smoke the ribs with wood chips which adds a HUGE amount of flavour, They usually have smoking chips in grocery stores or hardware stores sometimes (please do not use chips from your back yard) Wood chips come in a variety from Apple, Hickory, Mesquite and so on. Grab a hand full of the wood chips and devide them into two, take one half and soak in water for 30min and leave the other half dry. create a tinfoil pouch and fill it with the dry and wet chips this prevents them from buring right away. seal the pouch and poke several holes in the bag.
place the smoking bag under the grill when you start the bbq by the time the ribs are ready to come out of the tinfoil the smoke will be sufficently billowing.
Enjoy sorry theres no marijuana in it, the longer you cook the ribs the more tender they will be
