Temperature dropped a bit last night/this morning, therefore rising humidity. Would a bowl of open dry rice in the cab reduce this humidity (without changing temperature too much?)

The only thing that will reduce humidity effectively is AC, air circulating with dryer air, or a dehumidifier. The latter work well and don't cost that much.
