Yep I am always breaking the mold on things you know this!
Everything I grow ruins my head so it really gets down to a matter of flavor.
I find my buds taste better and more importantly my bubble taste better when I shoot for about 30% Amber and when I go past this as I do some harvest on purpose we find our favorite stash weed is always harsher and less enjoyable to smoke. The difference in potency again is something I can judge I can't smoke a whole joint of Apollo at day 54 or 62 but the ealier harvested buds taste better to me.
