Do you actually see the squirells doing this? I see squirells, rabbits (HATE the rabbits) and lots of other "critters" in my yard. They eat just about everything BUT my iris's. In answer to your question...you can put down a mesh screening around the base of your plant that acts as a deterrent. It's often used when planting bulbs. Just ask someone in the lawn/garden dept...they should be able to direct you to the stuff.
My iris's didn't bloom last year......damn crazy weather had everything in mother nature confused last year.
