You ought to frame the shot right if you plan on "watching it grow" when you're done. Otherwise the plant will be bouncing around everywhere when you watch it.

I'd say if you're going to take a picture from above, take it from far enough away that you can see the edges of the pot just barely touching the borders of the picture. It'll make it much easier to maintain a constant vantage point.
