I wouldn't bother. I just tested the pH of some carbonated water and it was roughly 6. The roots don't need the CO2 and there are much more cost effective ways to elevate the CO2 levels around the leaves not to mention that you'd have to basically continuously spray the leaves with the carbonated water and the CO2 in the water will quickly dissipate.
